Rural Vermont’s wildly popular series of home dairy processing continues into the new year, and the first stop is in Addison County! Rural Vermont partners with Gillian Comstock to offer a raw milk yogurt, kefir, and soft cheese class on Sunday, January 10th from 1-4 pm at the Metta Earth Institute Inc. in Lincoln. The class will cover the basics of dairy processing and include info about how and where to purchase local, raw milk. Following the class will be a tour of the Metta Earth Institute’s farm and gardens.

Metta Earth Institute, Inc. is a non-profit, educational retreat center in Lincoln, Vermont. Focusing on aspects of contemplative ecology, Metta Earth supports programs in community, ecological sustainability, yoga and other meditation practices, the arts, and wilderness awareness. Based on 158 acres with stunning views of the Green Mountains, Metta Earth has fields and pastures, a variety of forest ecosystems, an old and gradually restored apple orchard, an acre organic garden with a small, working member CSA, a resurrected, traditional timber frame barn, greenhouse, yurts, and wall tents, and a large main house providing meals, accommodations, and teaching spaces. Two Belgian draft horses, a cow and her calf, and about 50 laying hens graze the pastures rotationally. The cows are Milking Shorthorns, a heritage breed, and are grass fed, hand milked, and provide fresh, raw milk.
